How To Get Your Man To Eat Something Healthy

Well, yes, there's that way. I have been known to use my feminine wiles to discourage say, a frozen pizza, in favor of something green.

On the VERY rare occasion this fails to persuade, I have to employ an altogether different seduction tactic. One that hits a slightly higher chakra.

My fella recently told me a charming story about a holiday-time tradition in Ireland called the December Booze-Up. It goes like this: on Sundays in December, as the holiday season is underway and Christmas draws near, all the pubs in Dublin (and likely other cities and villages) open early, and line up Guiness pints all along the length of the bar, so that when church lets out (!) everyone can rush in and grab one-no waiting! I'm not sure exactly how the money thing works, but...point is, everyone is merry and buzzing with holiday cheer.

It got me thinking.

I have been trying to get this man to eat chia seeds for a while now. As you may know, chia is a superfood. It's a complete protein, which is great news for vegans, as many of the alternate protein sources available, like soy, are really not good for the body. By contrast, it is packed with vitamins, minerals, essential fatty acids (Omega-3 and 6), is hydrating, AND easily digested. When soaked, it has a tapioca-like texture, which makes it a very inoffensive addition to a shake, or as a pudding.  Perfect, no?

Apparently not. "Chia just doesn't do it for me," he states flatly.

Oh. Okay. Could you possibly be any more difficult?

And then it hit me.

His eyes lit up with absolute glee when I presented this to him.  "That looks GREAT!!! What is it?" he asked, as he charged toward it, waving a spoon like a madman. "Mocha Chia pudding," I replied, smiling brightly.  (Well, it may have been a teeny bit sinister.)

He recoiled, then leaned forward again, eyeing it, then me, suspiciously.  "It's delicious," I purred. At first, he approached the glass like a spooked coyote...and then, after one tenuous nibble, he began to DEVOUR it like a vampire that hadn't fed in days! "I...want...MORE!"

 

Mocha Chia Pudding with Coconut Cream

Pudding:

Serves 2-4

1/2 cup raw chia seeds

  • 2 cups unsweetened almond milk
  • 2 1/2 Tbsp raw cacao powder
  • 1 1/4 tsp finely ground organic espresso beans
  • 3 dropper liquid stevia (vanilla or coconut)

Combine all ingredients in a high-speed blender. Pour into a bowl, and let it sit for 10 minutes. Stir. Pour into pint glasses (you can pick these up at a local dollar store) and allow to chill for 1/2 hour. 

Coconut Cream:

  • 1 13-oz. can unsweetened coconut milk
  • 10 drops liquid stevia (vanilla or coconut)
  • 1 Tbsp pure maple syrup 
  • 1/4 tsp finely grated ginger

Refrigerate coconut milk at least 6 hours ahead. When it is well chilled, separate the cream from the liquid and scoop it into a bowl. (The liquid can be refrigerated and used in shakes, or to drink.)  Add the stevia, maple syrup, and ginger, then blend with an electric mixer on high speed until mixture resembles whipped cream. Slowly add a small amount of coconut liquid to thin it if you like (pictured.)

Serve pudding "pints" topped with coconut cream.
