Let's have a little margarita party...
Monday is, of course, Cinco de Mayo, the holiday thought to mark the Mexican Independence Day of 1821, which, despite it's commercialization, is of great importance to many people. (The actual Independence Day is September 16. May 5th commemorates a battle victory some 50 years later.)
What it is in reality, is an excuse for businessmen to get plastered and cheesy bars to host tequila shot get-downs. (Sigh with eye-roll here.)
While we, my Loves, have no interest in that, we cannot escape it, especially in The States, where frat-boy drinking holidays are revered, and often elevated to religious status.
Let's join the party, Vixen style.
Get your co-workers together to divide and conquer the shopping list.
You will need:
- Margarita or martini glasses (procured at a local dollar store)
- A blender
- Coconut water
- Frozen organic pineapple
- liquid stevia
- Celtic salt
This ratio will make 3-4 servings, depending on how large the glasses are, and how much ice you use:
- 6 oz. coconut water
- 6 ice cubes
- 1 C frozen organic pineapple
- 1 lime, + several for garnish
- Celtic salt
- 6 drops liquid stevia
Pour some Celtic salt out into a plate. Blend all the ingredients together, squeezing the lime juice into the blender, then saving the remaining pulp and rind. Add a pinch of salt at the end for a quick final pulse. Run a quartered lime around the rim of each glass, then dip them in the salt. Now pour your frosty blended drinks into each glass.
(And if you want to add a splash of spirits,

So you have a fresh, hydrating, juicy drink, sweet and tart, full of vitamin C, minerals, and antioxidants to help you glow...even if you do add spirits, it's still a much healthier option than anything out there.
